Recipe Tried: Baked Sole Fillet, The Mediterranean Way

Let me start off by saying that I am not the biggest fan of fish, or really seafood in general. I hate steamed fish or anything that tastes overly fishy. Just looking at fish scales gives me goosebumps. It's funny because my mom is the biggest seafood lover I have ever met., I guess I didn't get the gene from her. However, somehow I had a whole package of frozen haddock in the freezer and I knew that I had to make something of it. I found a really great recipe from a website called themediterraneandish written by a super cool blogger called Suzy! I linked recipe because let me tell you something, it was absolutely delicious. My views on fish have completely changed. Incidentally, I had a lot of leftover lime for some absurd reason so I was pretty happy to have a recipe that I could use it for. Lime water was getting a little old after a few days. I unfroze the haddock that I had and went ahead with the prep. Unfortunately, the idea for this recipe was very last minute and to be honest I was not down to go buy the ingredients I didn't have. I did follow most of the recipe but again I did not have shallots, capers or ground cumin. I made do with the red onions I had and left the just decided not to use the other two ingredients. Side note, how do you guys chop onions without crying? Not only do I tear up, but I full out bawl. I can barely keep my eyes open and I feel like I'm about to sneeze my brains out. Is that normal? I've tried to keep water next to me but honestly it doesn't help me at all. Please help me out!

Anyways, after baking for the time she indicated, the kitchen smelt amazing. The aroma of the fresh herbs and that lime sauce is to die for. Seriously, for the smell alone you guys have to try it out. The fish looked so so tender when I scooped it out of the dish and it had absorbed all of that sauce while baking. I'm not kidding, my mouth is watering just thinking about it. I miss cooking so much! See that's the thing about living in a residence in college, you don't have the freedom to cook. More on that in another post though, today it's about this recipe.

Finished Product

I served it up with a side of rice and chopped up a whole lot of fresh dill. I generously sprinkled it over my dish and it added a side of magic to the dish. The fresh dill delivered an extra juicy crunch factor and the butter lime sauce...YUM. Seriously if I still have not convinced you to try this recipe, I am saying it again...just do it. Even if you're not a fan of fish, I think you'll love this recipe. There isn't an overpowering fish taste and the sauce balances everything out beautifully.
